Our protocols

We prepare our sauces faithfully following the ancient family recipes , those handed down from mother's mother's grandmother's mother, the latter make the difference.

But precisely because they are “ours”, Vestalia sauces , although original, have had small variations that make them even more tasty and inimitable. Ingredients, procedures, variations are secrets meticulously described and jealously guarded in our protocol manual, better known as the Vestalia Bible.

PHASE 1

The line

The first phase of our preparation concerns the line setup. Depending on the recipe to be performed, we organize all the ingredients, weighing them carefully (according to the protocol indications) and washing the vegetables and greens thoroughly under running water. The cutting of the products, although it is a simple step, is performed with care and meticulousness given the large quantities that we use for our recipes.

Phase 2

The cooking

Our sauces are prepared according to tradition. Procedure and cooking times will remain a secret kept in the Vestalia protocol. What we can reveal is that every second during the preparation is important; making even the slightest mistake could compromise the success of the recipe and affect its taste. This is why we follow this phase scrupulously but with the same methods with which we prepare the sauce at home: pot and stove.

Sterilization

This is the last phase of our preparation and in all likelihood it is the one that makes the difference. We are perhaps the only ones to use this procedure for the preservation of sauces and for this very reason the details of this last step will remain guarded in the "Bible of Vestalia". What we can say is that even in this last phase timing is everything, respecting it perfectly allows us to bring to your tables sauces that preserve the flavor and smell of those just cooked.

Vestalia: The Story of a Friendship

Many business projects and intuitions are born by chance, almost by chance. This is the case of Vestalia, a tasty idea, born in front of a glass of good wine. It was 2017 and Luca, one of the two current partners, worked in a wine shop (made into such by himself from an old cellar), frequented assiduously by Roberto, the one who will be the future partner. The two boys at that time were little more than acquaintances, but they often sipped a glass together especially at closing time when Luca could dedicate a little time to his customers. And it was on one of these evenings that Luca sat down at the table of the one who will become his current partner and the project that will become Vestalia took shape. In front of good wine everything seems easier and more achievable, but the young boys had clear ideas and the desire to succeed and so day after day, difficulty after adversity, that incomplete and embryonic project began to take shape. In May 2020, Vestalia was born from the ashes of Covid, a project as ambitious as its founders who will never lose the desire to get involved.
