Amatriciana is one of the most popular traditional sauces, made with tomatoes and cured pork cheek in extra virgin olive oil. They are simple ingredients, which combined together create an irresistible flavor.
Amatriciana sauce is one of the most traditional dishes, but it comes in many different versions. We rely on the traditional one. After cutting the guanciale into strips, heat the oil in a pan and, when it is very hot, brown the guanciale. Once it has browned, add some wine and, once it has evaporated, set the guanciale aside. In the same pan, pour the cherry tomato first and then the tomato puree; once ready, add the previously cooked guanciale.
At the end of cooking, off the heat, add grated pecorino and season with ground pepper.
