Genovese is one of the most beloved dishes of the Neapolitan tradition, a true symbol of Neapolitan cuisine, capable of conquering even the most demanding palates. Our Genovese Tonno Sauce is a rich and delicate reinterpretation of this historic recipe, prepared with fresh, quality ingredients and without preservatives.
It begins with the soffritto of onions, chopped with the same care that you would put into the preparation of the traditional Genovese. The onions are cooked slowly, until they reach that softness that is the heart of the recipe. In the meantime, the fresh tuna, carefully selected, is cut into cubes and sautéed in a pan with garlic and extra virgin olive oil, to keep all its flavors intact.
To get the most out of the dish, the tuna skin is used to prepare a rich broth, which is gradually added to the onions during cooking, to enrich their flavor in a natural and intense way. Only in the last few minutes of cooking, the sautéed tuna is added to the sauce, for a perfect final result: a thick and tasty sauce that recalls home-made dishes, prepared with the same passion and dedication of the past.
